It hasn’t always been that way. If you’re visiting Paris you may like to know a little about the history of Parisian cuisine.
Way back in the Middle Ages French cuisine shared much in common with Moorish cuisine – think spiced meats including pork and poultry, often salted or smoked to keep them preserved for as long as possible. Meals were conducted in a ‘service en confusion’ method, meaning everything all at once. Even back then the style of presentation was very important with the brightest coloured dishes (often created with saffron or spinach) winning the best accolades.
In the 15th and 16th centuries French cuisine borrowed much from the Italian traditional due to the Florentine princess, Catherine De Medicis. However, it’s in the 17th century that we first see the appearance of ‘haute cuisine’ or ‘high cuisine’. A chef named La Varenne is considered to be the author of the first authentic French cookbook. He avoided extravagance and abundance and chose to focus on top quality ingredients.
The French Revolution signalled the freedom for chefs as they could sell any food product they wanted after the fall of the French guilds. So began a whirlwind of experimentation that stretched through to the modernization of haute cuisine in the 19th and 20th centuries. The legendary chef Georges Auguste Escoffier owned many restaurants in Paris and revolutionized the organisation of the kitchen with different chefs responsible for different areas of the menu. This specialization and continued traditional of experimentation brought Paris into focus as a global culinary force.
